Tom’s Museum Cellar Selection – Christmas 2016

Winemaker’s notes

2011 Yabby Lake Single Vineyard Chardonnay

The vintage:

La Nina struck with intensity and persistency, dumping well above average rain across most of Australia throughout the entire growing season. An exceptionally difficult year in the vineyard and winery.  The star of the vintage was without doubt the Chardonnay.

The wine:

Intense, mineral and tightly coiled, it is drinking beautifully now and will show its best over the next 5-10 years.

2013 Yabby Lake Block 6 Chardonnay

The vintage:

A warmer than average season and subsequent early harvest produced highly fragrant wines with lovely balance and texture.

The wine:

The aroma is a complex array of citrus blossom, lemon rind, almond meal and a hint of struck match.  The palate has a great depth of flavour and texture and is tightly wound together with a precise mineral intensity.  The wine finishes pure and long.  Giving more and more, this wine is compelling today, and still has years ahead of it. Cellared carefully, it will drink well for another 10 years.

2013 Yabby Lake Single Vineyard Pinot Noir

The vintage:

A warmer than average season and subsequent early harvest produced highly fragrant wines with lovely balance and texture.

The wine:

Intensely perfumed and complex aroma with great depth of character. The palate is bursting with red and dark fruits.  This beautifully structured wine shows exceptional concentration, with a silky texture and volume of fruit that carries the long finish.

This wine is showing lovely character today and will age gracefully for another 6-8 years.

Top Gold in Premium Pinot Noir class at the Sydney Royal Wine Show 2015

2015 Yabby Lake Block 6 Pinot Noir

The vintage:

The first vintage in the brand new winery at Yabby Lake and what a great year to start. A warm and extended season, producing some of the best wines we have made. Classics in the making.

The wine:

Recently featured by James Halliday in his 2016 ‘Top 100’ wines of the year.

50/50 MV6 and Pommard clones. The fruit was handpicked and gently de-stemmed into small open fermenters. 20% whole bunches.  Following a 3-4 day soaking the fermentation proceeded, peaking in temperature at 32°C. The wine was pressed off skins after 10 days into tight grain French oak 500L puncheons for malolactic fermentation and maturation. It remained in oak until February 2016 when it was bottled. No fining, light filtration. No additions except so2.

Black fruits, spice, brambly and intense. Rich and laden with red and blue fruits, layers of flavours and texture roll in unison with the tightly-packed tannins.

2012 Heathcote Estate Single Vineyard Shiraz

The vintage:

Dam storages were still full and soil profiles likewise leading into the 2011-12 season, after a wet previous year. Spring temperatures were slightly warmer than average. An excellent year, of even growth and wonderful balance - similar in character to 2010.

The wine:

The grapes were fermented in a combination of open and closed fermenters after gentle destemming, with some batches receiving whole bunches.

Extremely perfumed with layers of red and black fruits. The wine is pristine and poised with floral notes, tar, gun flint and exceptional concentration and purity. The palate is seamless and plush, loaded with fruit texture and beautifully ripe tannins.

A classic year, showing great character and depth at almost 5 years old and will age gracefully for another 10 years.

2009 Heathcote Estate Block F Shiraz

The vintage:

Historically, the vineyard is watered minimally so the vines are quite drought tolerant and on the whole were able to endure the extreme weather conditions of 2009 vintage well.

Selective hand picking was undertaken to preserve only the best parcels of fruit – these parcels stood out with defined structure, aromatics and tannin.

The wine:

Extremely fragrant and powerful aromas leap from the glass, violets, liquored dark berries, earth, gun flint, loads of spice, black pepper and heady perfume, this is a seriously complex array of aromas. The most complex and alluring wine we have made from the Estate.

Palate is beautifully poised and forthright, deep, fine, intensely concentrated and with the silkiest texture and length. The finish is long and fragrant. This is a beauty and a real benchmark for us in terms of its utterly seductive texture and complexity of flavour.

While ready to enjoy now, it will continue to deliver perfume and power for years to come.
